Producer and miller in Provence

“When you’re born in Provence, you can’t live without the scents of the garrigue, the breath of the mistral, the caress of the sun and the magic of the olive tree, the tree that shapes the Provençal landscape”.

Inspired by this bucolic picture, Catherine and Jean-Benoît Hugues passionately cultivate the tradition of the olive tree, a hundred-year-old tree that is both sovereign and capricious. After living for fifteen years in the United States, on the vast plains of Arizona, they decided to return to their roots.

They returned to Provence in 1997 when they fell in love with old olive trees planted on the southern slopes of the Alpilles at a place called CastelaS.

Today, Domaine CastelaS produces olives on 45 hectares in the Vallée des Baux-de-Provence Protected Designation of Origin (PDO) (15 hectares of which are organically farmed) and 65 hectares in the Plaine de Crau (Provence PDO).

“With us, we work with the seasons, we work with the wind, we work with nature. With great respect for the landscape, nestling in the heart of the Vallée des Baux de Provence under the protective gaze of the Château des Baux, the CastelaS Mill extracts olive oils with intense aromas.

Green fruity, old-fashioned or aromatic olive oils, table olives and tapenades are all part of a typical taste escape that has the air of a Van Gogh painting.

Discover the flavours of olive oils from the Vallée des Baux de Provence. In summer, olive oil tasting takes place in the garden in the shade of the arbour for a Provencal experience.

Self-guided tour

Free, all day, every day without booking
Plunge into the heart of the olive-growing profession and stroll through the mill’s olive orchard. An educational trail punctuated by 12 audio points is available to listen to on your smartphone. Each of the 12 points retraces one month of the year in the olive groves.
