Les Baux Jus is a family affair, the story of chef Paul Guény and his parents (including his mother, who specialises in essential oils and has a shop on site).
With his respect for nature, Paul revisits the codes of French and international gastronomy by infusing them with 100% plant-based cuisine.
His aim is to help you rediscover the taste of vegetables, using raw, gluten-free products, cooked at low temperatures or without cooking.
Inside a listed troglodyte cave or on the shady terrace, you can begin your culinary journey.
Small plates for yourself or to share, veggie street-food, it’s a mouth-watering experience! A marriage of textures, flavours and colours that’s good for all the senses!
